An
Invitation from
Don and Arlene Coulon...
...Mother Teresa use to say “ At the end of the day, look at your
hands and ask: “ Where have you been today and what have you done
for others?” We cannot all be like Mother Teresa but doing something
to help somebody in need is a worthwhile and rewarding experience for
everyone.
However, few of us come in contact with a person needing help in our
every day life. And this is where MANO comes in. MANO is an organization
totally dedicated to the less fortunate living across our border in Tijuana.
One of MANO’s main projects is the building and equipping of a charity
hospital in Colonia Miramar, Tijuana.
We hope you will like the menu we have designed, and that when you get
home and look at your hands and ask, “Where have I been and what
have I done today?” you can answer, “Today, I have done something
that will be of great benefit to others.”
The Menu for the Gala was lovingly prepared by the 5 Chefs,
and served to over 300 enchanted guests.

The 5 Chefs Gala was held at St. Mary Magdalene Parish Hall. Over 300
diners attended and enjoyed the marvelous champagne, wine and fine dining.
Old friends caught up on news, and many new friendships were created.
The large hall was transformed into an warm intimate setting with the
glow from candelabras surrounding the dining area, flower and plant settings
and lovely oriental screens.
An entertaining slide show was presented briefly to inform the diners
of MANO’s projects, especially the Charity Clinic in Tijuana
Sisters from the Tijuana Clinic sing a traditional Mexican song after
the blessing. Sister Lupita, Sister Lulu and Sister Ester Marina were
the 3 pioneer nursing sisters that began the health services when the
clinic first began in the early 1990’s. They first started in a
double wide trailer, on the building site. They later moved the Clinic
to a building close to their residence while awaiting the completion of
the present 2 story facility. It was through the contacts of a Tijuana
supporter of the project that the Sisters came up from their home base
in Michoacan to staff the original clinic.
MANO members Dick Roy and Marie Hinckley cleaning up after the dinner,
in the wee hours. Marie served brilliantly on the Gala Dinner Committee,
and Dick was MANO Treasurer for a number of years, and continues to provide
year end accounting services for MANO through his Roy Business Services. |
